Fink Commander only shows whole packages

Since http://pdb.finkproject.org/pdb/package.php/coreutils notes that
coretils is only available in the unstable tree, then you need to
activate that. Fink Commander has a preference item for that, but
occasionally users have reported it not working. You can also activate
unstable via the command-line tools via
fink configure
After you do this, you will possibly need to download new package
descriptions via a selfupdate-rsync or selfupdate-cvs. *Then* do a
scanpackages. (it's really only needed to run it manually when adding
or removing package trees). This is all in the FAQ, by the way. You'll
probably also need to run Fink Commander's "Update Table" command manually.
You possibly want coreutils-default, too,
You may have cvs or rsync updating turned on already, but since you
didn't send that information I have no way of knowing. Fink Commander's
"Feedback", either positive or negative, provides such information as does
fink --version
from the command line.
