How to do it depends on the details of the package.  Some packages take
a configure flag to tell them where to find X11; some wind up needing to
use fink's xmkmf package, and have to be directed appropriately.  I
generally do the following when trying to test packages for this:

cd /tmp
tar -xvzf /sw/src/<source_tarball_file>
cd <source_directory>
./configure --help
