If you don't have Apple's X11 installed you have two choices.

1)  Install the X11User package from your Snow Leopard media, as well as
the X11SDK from Xcode.

2)  Use gnuplot-nox, which doesn't use X11, and make sure to pick "nox"
options for any dependencies.
