Only if a package description can be made for it, meaning that all of its dependencies are available, and it will actually build on OS X. You can only use Fink to install those package for which there is a description made. And Sourceforge CVS is down, so no new descriptions can be added to the project until they fix that. You're also free to create one on your own machine to do so.
