Fortunately, I saved the Install Lion.app file -- I reinstalled and re-updated the system and it seems to be back to normal. I have no idea what would remove /usr/bin/gcc etc. But there is still a separate /Developer/usr/bin/gcc in there. Fink is now building.
Could have been some strange bug?
