This low package count says you haven't run 'fink selfupdate' after first installing Fink. You don't say which OS X version you are using which can affect which packages are available. As far as the Fink database is concerned 'fluidsynth' is an old version of the FluidSynth program. To get the latest version, you want to install the 'fluidsynth1' package (after doing a selfupdate first).
