I think this is fine.  Another possibility is to just do something like

  mkdir -p %i/share/doc/%n
  ln -s %p/share/gnucash/doc/COPYING %i/share/doc/%n

i.e., the only thing that really *has* to be in %p/share/doc/%n is the
justification for the license field.
