I wish to add cfree-rootless as a choice as well. The *-rootless package is the successor of both *-server and *-rootless. As a naming scheme, it would have been more natural to retain the *-server name and dump the *-rootless package, but for reasons of upgradability, the *-rootless name survived.
BTW, there are more details about this part of fink's history to be detected in the older versions of the web pages in the cvs repository. The disappearance of the xfree86-server package, for instance, is visible in the diffs between r1.15 and r1.16 of web/doc/x11/inst-xfree86.php, compare
