This works for a postscript printer. There are a lot of options to do this with all kinds of programs. You can even just drop the file onto the PrintCenter icon. No such luck with a non-postscript printer.

I don't use the EPS version myself, but it enables support for the CUPS
libraries.  I believe that these are used to print postscript files to
non-postscript printers.

Yes, it installs a pstoraster filter in /usr/libexec/cups/filter/ and has a device "cups". No x11, though.
