How about munging the info files to insert SetCC: gcc-3.3 into everything, or having (I think someone else suggested this) /sw/fink/ gccver which has symlinks for gcc, g++, etc. to /usr/bin/gcc-3.3 and prepend that to the PATH on all builds.
