Unfortunately, the PDF/EPS selection feature didn't make it into release 
0.2.1 but you can actually use Edit -> Copy the get the EPS source, 
paste it into a text editor and save it as foo.eps;-)

Alternatively you can grab the CVS sources 
(http://sourceforge.net/cvs/?group_id=39915) and build your own version 
of AquaTerm which has this option. (As simple as double clicking the 
AquaTerm.pbproj file and select build from the menu)

You then just replace /sw/AquaTerm.app by the following command (issued 
in the aquaterm directory):
sudo cp -r build/AquaTerm.app /sw/Applications/

A third alternative is to just wait for the AquaTerm 0.3.0 release;-)
