With other Unix systems you'd simply have an empty directory called /sw which would be a mount point for your partitions. The all the paths are still the default /sw... MacOS X insists on mounting everything under /Volumes but you can still have /sw be a symlink to /Volumes/SomeDisk and all should be happy.
