Speed is all relative. X11 is much uglier, I'll give you that, but it's also much less restrictive hence, maybe, more fun to use. In any case, launching X from the console instead of within Aqua feels significantly quicker to me, though I haven't done any tests to verify that -- it just seems like X11 is much more lightweight than Aqua for many roles. Plus, I often have a VNC session going on my Mac so that I can interact with it from remote PC's; X over VNC isn't that bad while Aqua over VNC sucks. Extremely painful computing.
