1) You do actually _have_ to remove /usr/X11R6, /etc/X11, and /Applications/XDarwin.app to install xfree86 with fink. However, everything that you compiled should be stored in a deb file, so you should be able just to do the 'fink install', and fink will find the deb and unpackage its contents in the right place.
2) I think that running the MacGimp installer will indeed trash your current fink installation. How about installing gimp through fink? -- Alexander K.
