AFAIK gnuplot-carbon doesn't work at all with unix apps that pipe output 
to gnuplot (e.g. octave).
Last time I heard (some 6-9 months ago) the author of gnuplot-carbon had 
some solution planned. Also note that gnuplot carbon is based on v3.7 
sources whereas the version provided by fink is based on a (almost) 
current snapshot release.
To be fair, gnuplot-carbon sports a number of unique features such as 
save to PICT, QuickTime movie and Applescript support.
