I appreciate all of the helpful advice provided on this list... while 
none of the suggestions fixed the problem, I did learn a bit more about 
how the OS works, especially Open Firmware.

The solution that did finally work was to put the old "Apple Provided" 
hard drive back into the laptop and reinstall the OS on it.  I was able 
to copy everything back on to the drive and install the 10.2.1 update 
on it.

Wish I knew why the other drive worked fine under 10.2 and earlier, but 
I can live with this (the newer drive was faster than this one and a 
little bit larger, but not enough to justify the troubles it gave me!)  
I'd been meaning to get an external case for the leftover drive, and 
this "experience" gave me the justification to do so now!
