I'd say if you've been using unstable that there shouldn't be any real
issue with leaving it enabled, and that disabling it is also fine.  Not
turning it on will probably be the recommendation for new installations.

You won't need to do another selfupdate if you had both stable and
unstable enabled:  both sets of info files get downloaded.
