You need to install the -dev versions of the gnome library packages.
OK, but.. they're not listed on the fink webpage packages list as well. (I looked there, because the linphone configure helpfully suggested that). How do I get the list of the -dev packages?

They are if you click the package, it lists all the splitoffs.

99% of users do not want to see them, so it is a good thing that they aren't on the "Section" lists of the PDB. You can see them for example at http://fink.sourceforge.net/pdb/package.php/libgnomeui2 on the bottom of the page.

"fink list dev" will also show you. FinkCommander will also show you in a nice cocoa GUI list of packages. (http://finkcommander.sf.net )
