I should have mentioned that I tried 'fink install gnuplot', but the package simply isn't available in any guise:

fink install gnuplot
curl -f -L -s -S -O ftp://ftp.gnuplot.vt.edu/pub/gnuplot/testing/gnuplot-3.8h.0.tar.gz
curl: (19) No such directory.
### execution of curl failed, exit code 19
Downloading the file "gnuplot-3.8h.0.tar.gz" failed.
...

By the way, 'fink describe gnulplot' gives the same nonfunctional site: http://www.gnuplot.vt.edu/
- the same nonfunctional URL as is posted in the packages webpage.
