How do I switch to the unstable builds? I need a more recent version of imagemagick. Oddly, the version in the stable tree is very out-of-date.
I suppose here that you've already updated via cvs and that the directory for Fink stuff is the default one, i.e. /sw.

Then in terminal:

sudo pico /sw/etc/fink.conf

Then change the line with Trees at the beginning (4th line) so that it looks like this:

Trees: unstable/main unstable/crypto local/main stable/main stable/crypto local/bootstrap

ctrl-O ctrl-X to save and quit pico and then fink selfupdate-cvs.

Caution: this method updates all your package to the unstable trees, it can take a long time to change all packages that need it.
