Well, they are different versions of the same stuff. The reason for the separate packages is that evolution-1.2 requires gtkhtml-1.1, but some of the other packages require an earlier version. My recollection is that there were some packages that had an erroneous dependency on gtkhtml (rather than a build-dependency), but that this was fixed in unstable. Maybe the fixes didn't get carried over to stable (if you primarily run stable).
What happens if you try to uninstall gtkhtml manually?
