There's a great app for Windows called Proxy Workbench:

It acts like a proxy server for HTTP and other protocols in the same way as
things like squid, but it has a very visual interface. It's not designed to
be particularly efficient, but as a handy means of watching the traffic
during an http connection it's invaluable, supporting programmable capture,
throttling, neat graphical output and raw data dumps. Does anyone know of
something similar that can run on OS X? Perhaps a GUI wrapper around squid?
