I was seeing similar behavior, and I had to do a little quirky hacking to get it to work. There are still some bugs, and I believe that this is one of them that will be fixed in Panther.
This is how I managed to get it working. X11 appeared to be exiting because nothing was being run in the .xinitrc. I tried putting gnome-session in my .xinitrc file, but that didn't work. What finally did work was changing my .xinitrc file to contain:
xterm
Thats it. Now, when I startup X11, it runs xterm with no window manager, but at least it stays running. Then, I just type gnome-session into the xterm (you alternatively could start kde, or run another window manager manually). The kicker is that you will have to leave that xterm running, or X will exit. Its a bit of a pain. The source version of Apple's X11 doesn't contain Apple's quartz-wm, since it is not open source, which may be why things don't work (I am guessing?).
But, its entirely worth it to me in the short term. With the new X11, I am able to run full screen accelerated and I was also able to compile the latest unstable version of gimp. Oh joy!

I am running 10.2.6, December tools (gcc 3.1 not the new compiler, which I have but haven't installed, worry about conflicts with fink).
Any help appreciated.
