The Panther dev tools ship with gcc 3.3 as the default, but also provide gcc 3.1 and gcc 2.9.5.2.
I recently got a new powerbook, which I wiped and installed Panther on. I copied over a fink installation from my old powerbook and my fink apps work fine. I have been compiling some fink apps with gcc 3.3 which works as long as I am careful to recompile any c++ dependencies.
Any breakage tends to occur with major releases, such as 10.1 to 10.2, not dot releases such as 10.2.6 to 10.2.7.
Making the choice between a powerbook and a tower involves many considerations. I don't think fink is a major one. Make the choice based on your needs. Fink should work on fine either system.

The skinny is, I need fink to do what I need to do, and I have to decide on a G4 Powerbook or a G5 tower. How fink will work (or not) influences the decision.
I may be wrong, but it probably won't work right away. IIRC, the G5 uses panther, which uses gcc 3.3, which don't work with fink yet. However, I may be wrong, since the precompiled binaries may work, but I'm not sure if anybody's tried it yet...
