You should be able to get 3.1 back using gcc_select. Run gcc_select --help to get the specific command (mine says to use 2 or 3 to select between them, but I don't know the exact syntax to go back to 3.1.)
I think that syntax is adequate. As I recall, I issued "gcc_select 3" some time ago; now "gcc --version" gives 3.1.
