At the place where you got them from. They were put there by you. If you don't remember where you got them from, bad luck.
In any case, you cannot use Fink's automatic update tools for this.
If these are packages you copied over from unstable or from an older tree (and you are using selfupdate-rsync), then you can look in the Fink database at http://fink.sourceforge.net/pdb/ whether a newer version exists and then get the info and patch files manually either via rsync at rsync://master.us.finkmirrors.net/finkinfo/ or from the web cvs server http://cvs.sourceforge.net/viewcvs.py/fink/
