That was it!
It wasn't one that I generated manually - at least not that I remember. It was located at ~/.xpdfrc, and it had a modification date of over a year ago.
For whatever reason, it didn't cause problems with the previous version of xpdf. As soon as I removed it, xpdf began behaving itself. My laptop is newer than this old xpdfrc, and so I didn't have one on that machine, and thus no problems.
Thanks to all who responded. Fink, and this list, are a huge asset to OS X.
