Where did you look for the executables?   I have:

$ dpkg -L amarok | grep bin/
/sw/bin
/sw/bin/amarok
/sw/bin/amarok_xmmswrapper2
/sw/bin/amarokapp

("dpkg -L <pkg> | grep bin/" is a widely applicable way to look for the executables from a Fink package)

tried running fink purge amarok, selfupdate and update-all, and now fink
claims there's no package to install.  How do I get Amarok running on OS X?

What's the message? "No packages to install." means that the package is still installed, and you can check this via "fink list"

-or-

"no package found" which would suggest that you turned off the unstable tree before running "fink selfupdate" the second time.
