My apologies for wasting people's time - I hadn't noticed that the fink OpenSSH stores its config file in a different location. All was fine once I modified the correct file. :) I'm also very happy to report that the new OpenSSH installation fixed both of my problems with Apple's borked version.

Now, if anyone knows the best way to get this to launch at startup instead of /usr/sbin/sshd, I'd appreciate it. I tried disabling SSH in Sharing prefs, then creating a new LaunchDaemon file in /Library for my fink-installed sshd. This resulted in one copy of my sshd firing up and two copies of /usr/sbin/sshd launching, and no connection being made. Alternatively, I could try just moving /usr/ sbin/sshd out of the way and symlinking, if that's the cleanest way.

I appreciate any suggestions as to the best way to handle this.

First turn off /usr/sbin/sshd via the usual means (the Sharing System Preference).
The standard Fink way to enable its sshd is to use "daemonic enable ssh".
