Have you asked the Fink lilypond maintainer? He is perhaps not reading this list. This looks to me like a porting bug in the lilypond package; it tries to dlopen a *.so file that does not exist on the Mac. Alternatively, one could blame it on the lilypond source that does not understand darwin.
