Maybe you mean "building only the wanted language packs".. but why?
I don't want to. Of course, if many objections come, I'll consider again.

On my fastest machine, building OpenOffice.org takes half a day with only one language pack (e.g. --with-lang=he), or a day with 65 language packs (--with-lang=ALL). I thought "--with-lang=ALL" give us a good balance between who wants only one language pack and who wants some language packs.

Given the way you suggest ( building only one language pack at one time ): If I want both openoffice.org-de and openoffice.org-ja, I'll be forced to build OOo 3 times and it'll take me 2 days. On another (kind of) special case, if some university wants all language packs installed via Fink for students, it has to build them for 30 days long. (well, maybe it's a bad example; half a day with 65 Macs)

Until 2.0.0-1, building --with-lang=ALL was almost impossible for normal users; it consumed huge disk space up to 50GB or more. I looked for the way to avoid it for a long time, and very much helped by OpenOffice.org persons, and now the disk consumption on building is lowered: 7GB with 65 language packs. I thought it got close to your tolerance level...

Also, there was a problem with font conversion:

These errors are normal, unfortunately: Maybe I should have set 2>/dev/null (-_-; But I think now you can find some fonts on Mac OS X are also available on OpenOffice.org.
