I had a directory ~/.texmf-var that contained a bunch of formats. Does fink create that? Why in the user's home directory?

Anyway, I deleted that, a bunch of TeX stuff got regenerated, and everything went fine from that point onward.

This is a little weird: Your latex format ("latex.fmt") seems rather old and speaks only czechoslovakian. I see at this point the following:

LaTeX2e <2003/12/01>
Babel <v3.8d> and hyphenation patterns for american, french, german, ngerman, bahasa, basque, bulgarian, catalan, croatian, czech, danish, dutch, esperanto, estonian, finnish, greek, icelandic, irish, italian, latin, magyar, norsk, polish, portuges, romanian, russian, serbian, slovak, slovene, spanish, swedish, turkish, ukrainian, nohyphenation, loaded.

(Not that I will ever need to write in bahasa, but his is what Fink's standard tetex installation gave me.)

Maybe if you find out why your latex format is like this you will get some clue about the nature of the error. It is possible that jadetex.ltx makes assumptions about the existing latex format that are not satisfied in your case.
