I'd recommend "gnucash2", since that's the latest version. If you're not seeing that, either, then you probably need to run "fink selfupdate-rsync" or "fink selfupdate-cvs" to turn on access to the package descriptions needed to build stuff from source--to do so you'll need to install whatever version of Xcode is appropriate for your OS version (2.5 for 10.4, 3.1 for 10.5).
