We've generally recommended the release versions
1   because their header files and libraries are in sync, which still
appears not to be case yet in the official X11
2   They still have .la files, which the developer packages from our
binary distribution expect to be present. 

I can't speak for the betas, though.  I guess it would be up to you.  
Keep in mind that if you revert to an older version of X11 you might
well have to rebuild anything that you built with that the newer one
installed.
