The 10.4 -> 10.5 update procedure is:
1) Update fink to a new enough version, which you have.
2) Update the OS
3) Update Xcode to 3.0 or later (which you have, and you most definitely
want the Unix Developer Tools package rather than hacking around with
symlinks)
4) run
fink reinstall fink
which should switch you to the 10.5 distribution. Binaries should
become available, too, once your configuration is no longer mismatched.
