You can remove anything in /sw/src, as Benjamin noted--the worst case is
that you'll wind up downloading a tarball again to update a package.

You can also remove .debs, but that can cause you problems down the
line.  If you delete the .deb for a package that gets swapped out during
a build, Fink won't let you proceed in the operation until you've
generated a .deb.
