I didn't reproduce this on my own 10.6.8/x86_64 setup, but I've got an idea. Edit /sw/fink/10.4/unstable/main/finkinfo/text/ghostscript.info, change the the first line of the InstallScript to read: make -j1 install install-doc DESTDIR=/sw64/src/fink.build/root-ghostscript-9.02-3 and see if the build works.
