Have you set the environment variable DISPLAY somewhere? On their web site, http://xquartz.macosforge.org/trac/wiki, you can find a more up-to-date version. It has solved a few things, it even can update itself. (I think your old version never did launch for me. XQuartz and X clients from Fink do collaborate well.) Check also with launchctl which services are active.
