I've made what you said, only adding -switch in you command
(sudo xcode-select -switch /Path/to/Xcode.app/Contents/Developer)

The result is that xcodebuild -version is now on 4.3.2, and clang --version on 
3.1
Then I tried fink install ettercap... and it failed once again on the install 
of libpcap with the same errors as previously...
