We don't know anything about building Gmsh. You would need to ask the Gmsh developers or on their mailing list.
Is there some reason you can't use the Mac OS X binary at http://geuz.org/gmsh/bin/MacOSX/gmsh-2.5.0-MacOSX.dmg ? That's what I use.
