 From the terminal:

tar -cvzf session_archive.tar.gz <path-to-sessions-folder>

That'll create a g-zipped and tarred file, "session_archive.tar.gz" for 
you.  You could put this in a cron job too, to automate it (Cronnix is a 
good GUI tool for this).
