It really isn't a big deal.

1. dump old database schema using "isql -x"
2. create a new database and create objects "isql -i"
3. use fbcopy with "e" switch to copy all the data

FBCopy disables triggers by default, so all your data is the same. It also 
copies generator values.

In that case, you will need to:
- Extract a metadata script for the existing database
- Create a new empty database using v2.1 
- Apply the metadata script
- 'Pump' the data between the v2.5 and v2.1 databases
