Yeah same as with Spofer, mine might have failed an update long ago. I don't
remember either. But I do remember Firefox crashing a lot at one time. Even
submitted a crash report:
http://crash-stats.mozilla.com/report/index/cfa9243a-43fb-11dd-8f5a-001cc45a2c28
Can't remember what fixed it, I think it was an extension that caused it.

I saved the profile back then so it's even older than I thought. Now that I
found the bug report, I see that it's from 2008 with FF 3.0, but some files
in my profile show it installed 1.9.2. Which was probably somewhere in 2005,
as the oldest files in the profile directory are also from 2005. So pretty
much the same old age as with Spofer's install, seems like it happens only
on these old installs that get updated over time. If the files should have
been deleted with an update, then it obviously failed.

I'm wondering when the usage of this last-update.log file was added to
Firefox, if it didn't use the file in old installs maybe it just didn't
create one either after the update when Firefox started using this logfile.
Maybe I'm thinking too much in PHP style programming though, where you can't
write to a file that doesn't exist. If you don't check and create it first,
it'll just throw an error.
