Install Proxy Server on the NT system.

This is my personal configuration:

solution #1: (more expensive)
Dell notebook (multihomed) running Windows NT and MS Proxy 2.0
The other NT system (desktop) configured on its own subnet.

solution #2: (a little cheaper)
Install Wingate or Conceal PC Firewall on the PC connected to Cable or ADSL.
Configure the second system to proxy thru the PC connected to Cable.

In both cases, don't put any sensitive files on the PC directly connected to
the CABLE system.

I am thinking about moving my home PCs over to Internet Access via my Cable 
company for the obvious speed abilities. My concern is that it is fairly 
easy for someone to "sniff" me out while I am connected, and get access to 
my desktop/laptop.

Any simple safeguard recommendations out there?

I have 2 PCs a laptop and an NT server.
