I guess you're talking about sendmail config to specify the headers.
then check the sendmail.cf file and look for lines containing the keywords:
"Return-Path", "Received", "Full-Name", "Message-Id" and the like.
you can also get the same things using the m4 based config files, so you
might need to check sendmail docs.
other MTAs may have their own ways of doing that.
but after all, sendmail is the only serious MTA [just kidding:]
