LTS = only makes a difference if you want to use software that's all more than a year old (unless you manual install it separately from the distro). (Except for the hard work of the security-bug-fixers down the road, which is why they especially want to get Firefox 3 in) seriously, all releases of Ubuntu seem pretty stable to me, and are people going to need (want?) fish for ultra-stable servers?
