I think implementing a FIX engine would be a great senior project.  I would 
ignore QuickFix/J and the like and build it from scratch.  You aren't looking 
to get into production, you just want the experience of building a realistic 
piece of software.  

You might want to use QuickFix/J as a counterparty to help you verify that you 
are building a compliant engine.
