Rails and JSON (http://wiki.rubyonrails.org/rails/pages/JSON+Webservice+Plugin) -- because it's fun and your backend isn't bound to flash.

I prefer PHP with Flash. I find many PHP functions very easy to do the job that could take a while doing within Flash.
