I wouldn't develop in flex for ios if I were you. As much as adobe gives a lor of guarantees that it works, it is not officially supported. So it is possible that someday your application will stop working because there was an update and there will be nothing you can do about it.
Not only that, but apple has time and again told people that it will not support flash. It is not out of the realm of possibility that they will break all flash applications if they find out how just to discourage people. If you want to have an app that just runs on the iphone, learn objective c and be done with it. Otherwise, maybe the best option so far is html5. Rafael.
