I checked out Lynda.com's Flex training session and was pretty impressed -

If you're just getting into Flex, it will give you a great start. If you've
been doing it for a while, or you're going from 1.5 to 2, you won't find it
nearly as valuable, but I thought it was a great overview for anyone just
getting started with the platform. After going through the sessions you'll be
in very good shape.
